Handy Cake Popping Tips

  • Lollipop sticks are circular. Do not go for the flat "coffee stirrer" type as they don't usually work as well and they offer less presentation quality
  • It adds time, but be sure to cool/freeze the cake balls/pops before coating them, it will ensure that everything stays together.
  • Use a double-boiler, or a stainless steel bowl over a heated pot of water, when melting chocolate, candy melts or other coatings to avoid over-heating. You can also melt these in the microwave.
  • Stick with binding ingredients that have the consistency of cream cheese or similar. If it is too liquidy the cake pops can get too moist and lose their shape.
  • Plan out what you're coating the cake pops with ahead of time.
  • Give yourself at least three hours to make the cake pops (or more if you're going for more specialty flavors). Rushing is the easiest way to make a mistake.
  • Hold the cake ball in your hand while putting the lollipop stick into it.
  • Don't be afraid to freeze cake pops, they keep very well! Just make sure they are covered and remember that freezer burn is still a threat.
  • Be very careful when using butter or butter-based binding agents, they can end up making the lollipop sticks oily.
  • Dipping the lollipop sticks into the chocolate or other coating before inserting it into the cake ball will help it stick to the cake better.
